london almond cookies

london almond cookies


the ingredients:
+ 250 grams butter
+ 130 grams icing sugar
+ 450 grams cookie flour
+ 2 egg yolks
+ 1 teaspoon vanilla essence
+ toasted whole shelled almonds
+ toasted nibbed almond
+ cooking chocolate

method:
1. cream the butter and icing sugar until light and fluffy.
2. add in a vanilla essence and egg yolks and cream for a few minutes.
3. add in the flour and mix it well.
4. take a piece of toasted whole shelled almonds and cover it with a some dough and shaped it into an oval shape.
5. bake it at 180 degree calcius until light brown.
6. place the cookies into a paper cup.
7. coat the cookies with melted chocolate and topped with toasted nibbed almond.






ps: can add a bit of cocoa butter substitute when the cooking chocolate its too thick after many coatings.
pss: this measurement make around 100 cookies.
